  2. In a pan, heat ghee and add cumin seeds. Let them splutter.
  3. Add chopped green chili and curry leaves. Saute for a minute.
  4. Add diced potatoes and cook until they turn golden brown.
  5. Add soaked and drained sabudana to the pan. Mix well.
  6. Add crushed peanuts and salt. Stir and cook until the sabudana pearls become translucent.
  7. Garnish with fresh coriander leaves and serve hot with lemon wedges.

  • 1 cup sprouted moth beans (matki)
  • 1 cup mixed sprouts
  • 1 large onion, finely chopped
  • 1 large tomato, finely chopped
  • 2 tablespoons misal masala
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 3-4 cups water
  • Salt to taste
  • Chopped coriander leaves for garnish
  • Farsan (crispy toppings) for serving

  1. In a pan, combine sprouted moth beans, mixed sprouts, onion, tomato, misal masala, red chili powder, turmeric powder, and water.
  2. Cook on medium heat until the sprouts are tender, and the mixture thickens.
  3. Season with salt and simmer for a few more minutes.
  4. Garnish with chopped coriander leaves.
  5. Serve in bowls, topped with farsan.

  • 4 medium-sized potatoes, boiled and mashed
  • 1 cup gram flour (besan)
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • A pinch of asafoetida (hing)
  • 2-3 green chilies, finely chopped
  • 1 tablespoon ginger-garlic paste
  • Salt to taste
  • Oil for frying

  • 4 pav (dinner rolls)
  • Butter for toasting

  1. In a bowl, mix mashed potatoes, gram flour, mustard seeds, cumin seeds, asafoetida, green chilies, ginger-garlic paste, and salt. Form round patties.
  2. Heat oil in a pan and deep fry the patties until golden brown.
  3. Cut the pav in half and toast with butter on a griddle until they are golden brown.
  4. Place a vada between the pav and press gently.
  5. Serve hot with chutney and fried green chilies.

Vada Pav Sample Recipe:


2 cups gram flour (besan)

4 medium-sized potatoes, boiled and mashed

1 tablespoon oil

1 teaspoon mustard seeds

1 teaspoon cumin seeds

1/2 teaspoon asafoetida (hing)

1 tablespoon ginger-garlic paste

2 green chilies, finely chopped

Heat oil in a pan, add mustard seeds, cumin seeds, and asafoetida.

Make small round balls from the potato mixture and set aside.

In a bowl, prepare a smooth batter using gram flour, water, and salt.

Dip each potato ball in the batter and deep fry until golden brown.

Serve the vadas in pav with green chutney and tamarind chutney.
